Simple lady´s finger/okra stir fry

If you want to reduce the sliminess when cooking a lady’s finger/okra, here are a few tips: Make sure the lady’s finger is completely dry before cutting it. You can use a paper towel to pat them dry. Adding acidic ingredients like tomatoes, lemon juice, tamarind water or vinegar can help reduce the sliminess.
Ensure that your cutting board and knife are clean and dry when chopping the okra. A clean, dry surface will make it easier to control the sliminess of ladyfinger. Cleaning the knife with tissue paper between chopping ladyfinger (okra) is a good practice to help minimize the mucilage, which is the slimy substance released by the vegetable during cutting. Simple lady´s finger/okra stir fry
Ingredients
- ½ kg Lady´s finger
- 2 tbsp oil vegetable or any cooking oil of your choice
- 1 tsp mustard
- 1 dry red chilly
- 1 tsp chilly powder
- ⅛ tsp turmeric powder
- ½ tsp garam masala
- 1 tsp dried mango powder
- 1 tsp chaat masala
- A few curry leaves
- Juice of half a lemon
Instructions
- Trim the ends of washed and dried lady's fingers and cut them into small pieces.
- Heat oil in a pan over medium heat. Add mustard seeds, curry leaves and dry red chilly. Let them splutter.
- Add the chopped lady´s fingers and saute.
- After a few minutes add the lemon juice to reduce the sliminess and keep stirring. At this stage, it will turn more sticky. Don´t worry and keep stirring continuously.
- Once the stickiness has gone, lower the flame, and add all the spice powders. Continue stirring for another 5 minutes and it´s done.
- Enjoy your lady’s finger stir fry with hot rice!
