½ cup (120 ml) milk
⅓ cup (80 ml) neutral oil
2 tbsp strong brewed coffee (cooled) or 2 tsp instant coffee dissolved in 2 tbsp hot water 
1 tsp vanilla extract 

Note
The amount of sugar mentioned in this recipe gives the muffins a lightly sweet flavour. If you prefer sweeter muffins, you can increase the sugar according to your taste.

Notes: • *Syltsocker already contains pectin and citric acid, so additional pectin is unnecessary. The lemon juice is optional and simply adds a fresher, tangier flavour. 

• For a smoother jam, lightly mash some of the strawberries during cooking.
