Peanut Butter Banana Baked Oatmeal
Ingredients
- 2 ripe bananas mashed
- 1 ripe banana sliced
- 2 cups 200g rolled oats
- 1 tsp baking powder
- 1 ½ tsp cinnamon optional
- ½ tsp salt
- 1 ½ cup 350ml milk
- ¼ cup 50g peanut butter (creamy or chunky)
- ¼ cup mixed nuts and fruits optional
- ¼ cup 85g honey or maple syrup
- 1 tsp vanilla extract
- 1 egg
- Raisins optional
- ¼ cup chocolate chips or chopped nuts optional
Instructions
- Preheat oven to 180°C. Grease an 8×8-inch (or similar) baking dish.
- In a large bowl combine the oats, baking powder, cinnamon, and salt. Stir until evenly mixed. Stir in peanut butter, honey, egg, and vanilla. Mix until well combined.
- Fold in chocolate chips or mixed nuts if using. Pour in the milk and combine well.
- Add the mashed bananas and combine.
- Pour half of the mixture into the baking dish and spread it evenly. Layer with sliced bananas, then pour the remaining mixture on top, spreading it evenly.
- Top it with raisins.
- Bake for 35-40 minutes or until the top is golden and set.
- Let cool for 5-10 minutes before slicing. Serve warm and enjoy!
