Peanut Butter Banana Baked Oatmeal

Ingredients

  • 2 ripe bananas mashed
  • 1 ripe banana sliced
  • 2 cups 200g rolled oats
  • 1 tsp baking powder
  • 1 ½ tsp cinnamon optional
  • ½ tsp salt
  • 1 ½ cup 350ml milk
  • ¼ cup 50g peanut butter (creamy or chunky)
  • ¼ cup mixed nuts and fruits optional
  • ¼ cup 85g honey or maple syrup
  • 1 tsp vanilla extract
  • 1 egg
  • Raisins optional
  • ¼ cup chocolate chips or chopped nuts optional

Instructions

  • Preheat oven to 180°C. Grease an 8x8-inch (or similar) baking dish.
  • In a large bowl combine the oats, baking powder, cinnamon, and salt. Stir until evenly mixed. Stir in peanut butter, honey, egg, and vanilla. Mix until well combined.
  • Fold in chocolate chips or mixed nuts if using. Pour in the milk and combine well.
  • Add the mashed bananas and combine.
  • Pour half of the mixture into the baking dish and spread it evenly. Layer with sliced bananas, then pour the remaining mixture on top, spreading it evenly.
  • Top it with raisins.
  • Bake for 35-40 minutes or until the top is golden and set.
  • Let cool for 5-10 minutes before slicing. Serve warm and enjoy!

Serving Ideas:

  • Drizzle with extra peanut butter
  • Top with banana slices or berries
  • Serve with yoghurt or a splash of milk
