Ingredients
2ripe bananasmashed
1ripe bananasliced
2cups200g rolled oats
1tspbaking powder
1 ½tspcinnamonoptional
½tspsalt
1 ½cup350ml milk
¼cup50g peanut butter (creamy or chunky)
¼cupmixed nuts and fruitsoptional
¼cup85g honey or maple syrup
1tspvanilla extract
1egg
Raisinsoptional
¼cupchocolate chips or chopped nutsoptional
Instructions
Preheat oven to 180°C. Grease an 8x8-inch (or similar) baking dish.
In a large bowl combine the oats, baking powder, cinnamon, and salt. Stir until evenly mixed. Stir in peanut butter, honey, egg, and vanilla. Mix until well combined.
Fold in chocolate chips or mixed nuts if using. Pour in the milk and combine well.
Add the mashed bananas and combine.
Pour half of the mixture into the baking dish and spread it evenly. Layer with sliced bananas, then pour the remaining mixture on top, spreading it evenly.
Top it with raisins.
Bake for 35-40 minutes or until the top is golden and set.
Let cool for 5-10 minutes before slicing. Serve warm and enjoy!
