Roasted Garlic Yoghurt Dip

This creamy roasted garlic yoghurt dip is tangy and easy to make, perfect for snacking or as asauce for grilled meats and kebabs. Pair it with fresh vegetables, pita, or Persian dishes like pistachio kebabs and Shirazi salad for a complete, delicious meal.

Ingredients

  • 1 whole head of garlic
  • 1 cup Greek yogurt full-fat or low-fat
  • 1 tbsp olive oil plus more for roasting
  • 1 –2 tsp lemon juice to taste
  • 1 tsp honey or maple syrup optional, for balance
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh herbs parsley, cilantro, dill, or chives — optional

Instructions

  • Preheat the oven to 200°C.
  • Slice the top off the whole head of garlic to expose the cloves. Drizzle with a little olive oil and wrap the head in aluminum foil.

  • Place the wrapped garlic on a baking sheet and roast for 30–40 minutes, until the cloves are soft, golden, and caramelized. Let it cool slightly.
  • Once cool enough to handle, squeeze the softened cloves out of their skins into a small bowl.
  • Mash them well with a fork.
  • Add the Greek yoghurt, olive oil, lemon juice, honey or maple syrup (if using), salt, and black pepper. Mix until smooth and well combined.

  • Taste the dip and adjust lemon juice, salt, or pepper as needed.
  • Sprinkle with chopped fresh herbs like parsley, cilantro, dill, or chives for extra flavour and colour.

Chill before serving:

  • Refrigerate for at least 30 minutes to let the flavours meld.
  • Serve with fresh vegetables, pita bread, crackers, or use as a sauce for grilled meats and roasted vegetables. You can also use as a spread for wraps or sandwiches.
Can I make this dip ahead of time?

Yes! Store it in an airtight container in the fridge for up to 3–4 days. Roasted garlic flavour develops even more after resting.

Can I use regular garlic instead of roasting it?

You can, but raw garlic is much sharper. Roasting mellows the flavour and makes the dip creamy and sweet.

Can I use a different type of yoghurt?

Yes. Greek yoghurt is preferred for creaminess, but plain yoghurt or dairy-free yoghurt works too, though it may be slightly thinner.

Can I freeze roasted garlic yoghurt dip?

It’s best served fresh, but you can freeze it for up to 1 month. Thaw in the fridge and stir well before serving.

What herbs go best with this dip?

Parsley, dill, and chives are all excellent. You can also try cilantro or a mix of herbs for variation.
