Ingredients

Chicken marination

  • 250 g boneless chicken
  • 1 tsp kashmiri chilly powder
  • ¼ tsp turmeric powder
  • 1 tsp garam masala
  • ½ tsp ginger garlic paste
  • Salt to taste
  • 2 tbsp oil for cooking

Base

  • 3 –4 tbsp mayonnaise
  • 2 tbsp hung curd / Greek yogurt optional for extra creaminess
  • 1 tbsp cream cheese optional but recommended
  • ½ tsp black pepper powder
  • ½ tsp mustard paste or crushed mustard
  • ½ tsp garlic powder / 1 clove minced garlic
  • ¼ tsp mixed Italian herbs or dried oregano
  • ¼ tsp chili flakes optional
  • Salt to taste
  • 1 –2 tsp lemon juice
  • ¼ tsp smoked paprika optional
  • Fresh coriander or parsley a little, chopped

Instructions

Marinate the Chicken

  • In a bowl, add the boneless chicken along with Kashmiri chilli powder, turmeric powder, garam masala, ginger garlic paste and salt. Mix well so the chicken is evenly coated.

  • Cover and let it marinate for 15–30 minutes.

Cook the Chicken

  • Heat a pan with a little oil. Add the marinated chicken and cook on medium heat until it is fully cooked and lightly browned.

  • Alternatively, you can boil or steam the chicken until tender.
  • Once cooked, allow it to cool completely.

Shred the Chicken

  • Shred the cooled chicken finely using two forks or pulse it briefly in a mixer for a spreadable texture (do not over-grind).

Prepare the Creamy Base

  • In a mixing bowl, combine mayonnaise, hung curd (if using), cream cheese (if using), black pepper powder, mustard paste, garlic, Italian herbs or oregano, chilli flakes (optional), salt, and lemon juice.
    3 –4 tbsp mayonnaise, 2 tbsp hung curd / Greek yogurt, 1 tbsp cream cheese, ½ tsp black pepper powder, ½ tsp mustard paste or crushed mustard, ½ tsp garlic powder / 1 clove minced garlic, ¼ tsp mixed Italian herbs or dried oregano, ¼ tsp chili flakes, Salt to taste, 1 –2 tsp lemon juice
  • Mix until smooth and creamy.
  • Add the shredded chicken to the prepared base. Mix well until the chicken is evenly coated and the mixture becomes spreadable.
  • Add the smoked paprika, chopped fresh coriander or parsley and mix gently.

  • Taste and adjust salt, pepper, or lemon juice if needed.

Chill Before Serving (Optional but Recommended)

  • Refrigerate the chicken spread for 30 minutes to allow the flavours to blend.

  • Great as a filling for rolls or croissants

Notes

For added crunch and flavour variation, you can also mix in 1 small capsicum (finely chopped) and 1 small carrot (grated, optional). This makes the chicken spread more colourful and slightly fresher in taste.
How long can chicken spread be stored?

Chicken spread can be stored in an airtight container in the refrigerator for up to 2–3 days.

Can I make this chicken spread without mayonnaise?

Yes, you can replace mayonnaise with hung curd or Greek yoghurt for a lighter version.

Can I use leftover cooked chicken?

Absolutely. Leftover boiled, grilled, or roasted chicken works very well for this spread.

Is this chicken spread spicy?

It is mildly spiced, but you can adjust the chilli powder and chilli flakes to your taste.

What can I serve chicken spread with?

It pairs well with bread, toast, crackers, wraps, burgers, or as a filling for rolls.
