What Is Cinnamon Raisin Babka?
Babka is a rich, enriched yeast bread that is known for its twisted shape and beautiful swirls of filling. The dough is soft because it contains butter, eggs, milk, and a little sugar. After the dough rises, it is rolled into a rectangle, spread with a flavourful filling, rolled into a log, sliced, and twisted before baking.
This Cinnamon Raisin Babka features a classic combination of cinnamon, brown sugar, butter, and golden raisins. The filling melts into the dough during baking and creates sweet ribbons throughout the loaf. A simple sugar syrup brushed over the hot bread gives the crust a beautiful shine and helps keep every slice moist and tender.
The combination of soft bread, warm spices, and sweet raisins makes this babka comforting, elegant, and full of homemade flavour.
Why You’ll Love This Cinnamon Raisin Babka
There are many reasons why this recipe becomes a favourite after the first bake.
The dough is rich, soft, and easy to work with after rising. The cinnamon filling creates delicious swirls that make every slice look beautiful. Golden raisins add bursts of natural sweetness without overpowering the cinnamon flavour.
The sugar syrup adds a glossy finish and helps lock in moisture. This simple step gives the babka a bakery-quality appearance while keeping the bread soft for several days.
This recipe is also versatile. You can enjoy it warm from the oven, toasted with butter, or served alongside coffee, tea, or hot chocolate. It is equally suitable for a cozy family breakfast or a festive holiday gathering.
The Secret to Soft and Fluffy Babka
A great babka starts with a well-made enriched dough. Butter, eggs, and milk create a soft texture that stays tender after baking. Proper kneading develops the gluten, giving the bread enough strength to hold the beautiful swirls without becoming dense.
Allowing the dough enough time to rise is another important step. A slow, complete rise helps develop flavour and creates a light, airy crumb. Shaping the loaf carefully also helps produce attractive layers that bake evenly from top to bottom.
Brushing the finished loaf with warm sugar syrup is the final touch that gives the crust its signature shine and adds extra moisture without making the bread overly sweet.
Why Golden Raisins Work So Well
Golden raisins are an excellent choice for this recipe because they have a delicate sweetness and a slightly floral flavour. They pair naturally with cinnamon and butter, creating a balanced filling that is rich without becoming heavy.
Soaking the raisins before adding them to the dough keeps them plump and juicy during baking. Instead of drying out in the oven, they stay soft, making every slice more enjoyable.
Their lighter colour also creates a beautiful contrast against the rich cinnamon swirls, giving the finished loaf an attractive appearance.
Perfect for Every Occasion
One of the best things about Cinnamon Raisin Babka is its versatility. It fits almost every occasion and always feels special.
Serve thick slices for breakfast with fresh fruit and coffee. Toast leftover slices for an easy morning treat. Pack a few slices for lunch or enjoy them as an afternoon snack. The loaf also makes a thoughtful homemade gift for friends, neighbors, or family during holidays and celebrations.
Because it stays fresh for several days when wrapped properly, you can bake it ahead of time for gatherings or weekend brunches.
Tips for the Best Homemade Babka
Using room-temperature ingredients helps the dough mix more evenly. Knead until the dough becomes smooth and elastic for the best texture. Let the dough rise fully before shaping to create a light loaf with beautiful layers.
Spread the filling evenly so every slice has the perfect balance of cinnamon and raisins. Chill the shaped log briefly before slicing if you want cleaner twists and more defined swirls. Bake until the loaf is deep golden brown and fully cooked in the center.
Finally, brush the hot babka generously with sugar syrup as soon as it comes out of the oven. This simple step adds shine, moisture, and a professional finish.

Cinnamon Raisin Babka
Ingredients
Dough
- 2¼ tsp 1 packet, (7g) instant dry yeast
- 80 ml luke-warm milk 40–43°C
- ¼ cup (50g) sugar
- 310 g all-purpose flour
- ½ tsp salt
- 2 large eggs
- ½ tsp vanilla extract
- 100 g unsalted butter, softened
Filling
- 70 g brown sugar
- 2 tsp ground cinnamon
- 50 g unsalted butter, softened
- 80 g golden raisins
- ¼ tsp cardamom, Optional
Syrup (optional but recommended)
- 1 tbsp sugar
- 1 tbsp water
Instructions
Prepare the dough
- In the bowl of a stand mixer fitted with the dough hook, combine the all-purpose flour, sugar, instant dry yeast, eggs, vanilla extract and salt.2¼ tsp 1 packet, (7g) instant dry yeast, ¼ cup (50g) sugar, 310 g all-purpose flour, 2 large eggs, ½ tsp vanilla extract, ½ tsp salt
- With the mixer running on low speed, gradually pour in the lukewarm milk and mix until a rough dough forms. Increase the speed to medium and knead for 8–9 minutes, or until the dough passes the windowpane test.80 ml luke-warm milk
- The windowpane test is done by gently stretching a small piece of dough between your fingers. If it stretches into a thin, almost transparent sheet without tearing, the gluten is well developed and the dough is ready.
- Add the softened butter a little at a time, allowing each addition to be fully incorporated before adding more. Continue mixing until all the butter is incorporated and the dough is smooth and elastic.100 g unsalted butter,
- The dough should be slightly tacky but not sticky. If needed, add a teaspoon of flour or milk to adjust the consistency.
- Transfer the dough to a lightly greased bowl, cover, and let rise in a warm place for 1½–2 hours, or until doubled in size.
Prepare the filling
- Mix the brown sugar, ground cinnamon, softened butter and optional cardamom in a small bowl.70 g brown sugar, 2 tsp ground cinnamon, 50 g unsalted butter,, 1/4 tsp cardamom,
- Soak raisins in hot water for 10 minutes, then drain and pat dry.80 g golden raisins
Shape the babka
- Punch down the dough and roll it into a rectangle about 30 × 40 cm (12 × 16 inches). Spread the filling evenly over the dough, then scatter the raisins evenly on top.
- Starting from the long edge, roll the dough tightly into a log. Using a sharp knife, cut the log lengthwise into two equal halves. Twist the two pieces together with the cut sides facing upward to expose the layers.
- Place the twisted dough into a greased or parchment-lined loaf pan. Cover loosely and let rise for 45–60 minutes, until puffy.
Bake
- Preheat the oven to 180°C. Bake for 30–35 minutes, or until the loaf is deep golden brown and the internal temperature reaches 88–93°C (190–200°F). If the top browns too quickly, cover it loosely with foil during the last 10–15 minutes.
Sugar syrup
- While the babka bakes, combine the sugar and water in a small saucepan. Bring to a simmer, stirring until the sugar has dissolved. Remove from the heat.1 tbsp sugar, 1 tbsp water
- Brush the warm syrup generously over the hot babka as soon as it comes out of the oven. Let cool in the pan for 15–20 minutes before transferring to a wire rack to cool completely.
