Tuna Patties

Ingredients

  • 280 g of canned tuna drained
  • 1 onion finely chopped
  • 3 cloves of garlic finely chopped
  • 1 cup 90g Oat flour
  • 2 eggs
  • 1 tsp pepper powder
  • 1 tsp red chilli flakes
  • A handful of coriander leaves finely chopped
  • Salt to taste

Breading (optional)

  • 1 egg
  • ½ cup bread crumbs

To serve

  • Mayonnaise or ketchup or chilli sauce

Instructions

  • In a large bowl, add the drained tuna, chopped onion, garlic, oat flour, 2 eggs, pepper powder, red chilli flakes, chopped coriander leaves, and salt. Mix everything well until combined. The mixture should hold together — if it’s too dry, add a little more egg; if too wet, add a bit more oat flour.
  • Divide the mixture into equal portions and shape into small patties.
  • If you want a crispy coating, beat 1 egg in a bowl and place the bread crumbs in another. Dip each patty in the beaten egg, then coat with bread crumbs. However, this step is optional.
  • Heat a little oil in a non-stick pan over medium heat. Fry the patties for about 3–4 minutes on each side, or until golden brown and cooked through.
  • Drain on paper towels if needed. Serve hot with mayonnaise, ketchup, or chilli sauce.
