Viral Doner kebab

Ingredients

  • 500 g minced meat any meat, lamb/beef/chicken
  • ½ grated onion
  • 1 tsp Cumin powder
  • ½ tsp Oregano
  • 1 tsp Pul biber or chilli flakes
  • 1 tsp Paprika powder¨
  • ½ tsp Cayenne powder
  • 1 tsp Pepper powder
  • 2 tbsp Greek yoghurt
  • 1 tbsp Olive oil
  • Salt to taste

Instructions

Mix the meat:

  • In a large bowl, combine minced meat, grated onion, Greek yogurt, olive oil, and all spices.

  • Add salt to taste.
    Salt to taste
  • Mix thoroughly with your hands or a spoon until the mixture is uniform and slightly sticky—this helps it hold together.

Shape the meat:

  • Take a ball of the meat mixture and place it on a sheet of parchment paper.
  • Cover it with another sheet of parchment paper on top.
  • Roll the meat thinly and evenly using a rolling pin. The parchment prevents sticking and keeps the shape smooth.
  • Remove the top sheet of parchment paper.
  • Roll the meat (with the parchment paper) tightly in 2-inch sections until the entire sheet is rolled up.
  • Carefully transfer the rolled meat onto a large sheet pan, keeping its shape intact. (refer to the video for visual guidance).
  • Repeat the process with the remaining meat balls until all meat is shaped into thin strips.
  • Bake in a preheated oven at 200°C for 15–20 minutes, or until cooked through and slightly golden.
  • Slice thinly (key for doner style):
  • Once cooked, use a sharp knife to slice the meat thinly—this mimics the classic doner kebab texture.

Assemble the kebab:

  • Warm flatbreads, pita, or wraps.
  • Layer in the sliced meat, fresh veggies (lettuce, tomato, onion, cucumber), and optional sauces like garlic yogurt sauce or chili sauce.
  • Serve immediately while hot and juicy.
