2–3 cardamom podslightly crushed
1star anise
½tspvanilla extractor ½ vanilla pod, split
1–2 tbsp honey or brown sugarto taste
½cup120 ml heavy cream (for topping)
1applethinly sliced (for garnish)
A pinch of cinnamon or a splash of rum/brandyoptional
Instructions
Make the spiced apple base
In a medium saucepan, pour the apple must. Add the cinnamon, cardamom, star anise and honey.
250 ml 2 cups apple must, 1 cinnamon stick, 2 –3 cardamom pods, 1 star anise, 1 –2 tbsp honey or brown sugar
Bring to a gentle simmer over medium heat, then reduce to low. Let it infuse for 15–20 minutes so the spices release their flavour. Remove from the flame and add the vanilla extract and mix well.
½ tsp vanilla extract
Remove the spices, then pour the hot spiced apple brew into heatproof mugs or glasses.
Prepare the cream topping
Lightly whip the cream until slightly thick but still pourable (like the texture of coffee cream).
½ cup 120 ml heavy cream (for topping)
Gently spoon or pour the cream over the back of a spoon so it floats on the surface of the apple brew, creating a beautiful creamy layer.
Garnish and serve
Sprinkle a little cinnamon or nutmeg on top, and garnish with an apple slice or a star anise for a cozy touch.
A pinch of cinnamon or a splash of rum/brandy, 1 apple
