Pork pepper roast is a dish that features pork marinated in a blend of spices, primarily highlighted by black pepper. Ingredients

  • I kg pork
  • ½ tsp turmeric powder
  • 2 tsp coriander powder
  • ½ tsp chilly powder
  • 1 tsp garam masala
  • ½ tsp fennel powder
  • 2 tbsp ginger-garlic paste
  • Salt to taste
  • A few tablespoons of water
  • 1 no. big onion finely sliced
  • 2 -3 tbsps freshly ground pepper adjust to your spice preference
  • Juice of half lemon
  • A few sliced coconut pieces optional
  • A few curry leaves
  • 3 tbsp coconut oil
  • Coriander leaves to garnish

Instructions

  • Add the pork to a pressure cooker and marinate it with turmeric powder, coriander powder, chilly powder, garam masala, fennel powder, ginger-garlic paste, a few tablespoons of water, salt and cook for 4 whistles.
  • As the pork cooks it leaves plenty of water.
  • Heat oil in a cast iron pan, add the coconut slices and roast until it turns light brown.
  • Add the sliced onions and saute till it becomes soft and translucent.
  • Now add the cooked pork along with the water and combine everything well.
  • Allow the water to evaporate and add freshly ground pepper and mix.
  • Let the pork simmer until all the water evaporates.
  • Taste and adjust the salt and spice level at this point, adding more pepper if you like it spicier.
  • In the last few minutes of cooking, add curry leaves, a few tsps of coconut oil and roast it in a simmer flame for a wonderful aroma and flavour.
  • Finally, squeeze the juice of half a lemon and combine everything well.
  • Garnish with fresh coriander leaves and a tsp of coconut oil.
  • Serve the delicious Pork Pepper Roast with steamed rice, roti, puttu or bread. Enjoy this flavourful dish!

Notes

If you like the consistency to be semi-gravy, add more onions and skip the roasting step.
