Add the pork to a pressure cooker and marinate it with turmeric powder, coriander powder, chilly powder, garam masala, fennel powder, ginger-garlic paste, a few tablespoons of water, salt and cook for 4 whistles.
As the pork cooks it leaves plenty of water.
Heat oil in a cast iron pan, add the coconut slices and roast until it turns light brown.
Add the sliced onions and saute till it becomes soft and translucent.
Now add the cooked pork along with the water and combine everything well.
Allow the water to evaporate and add freshly ground pepper and mix.
Let the pork simmer until all the water evaporates.
Taste and adjust the salt and spice level at this point, adding more pepper if you like it spicier.
In the last few minutes of cooking, add curry leaves, a few tsps of coconut oil and roast it in a simmer flame for a wonderful aroma and flavour.
Finally, squeeze the juice of half a lemon and combine everything well.
Garnish with fresh coriander leaves and a tsp of coconut oil.
Serve the delicious Pork Pepper Roast with steamed rice, roti, puttu or bread. Enjoy this flavourful dish!
